Delicious Chickpea Divan

INGREDIENTS: 

  • ½ onion chopped
  •  1 t. minced garlic
  • 4 cups cooked chickpeas
  • 16 oz. chopped broccoli
  • 2 cups water
  • 1 T. veggie broth powder
  • ¼ cashews
  • 1-2 T brown mustard
  • ¼- ½ t. curry powder
  • Salt & Pepper
  • Cooked Rice or cauliflower rice or both

DIRECTIONS:

  1. Saute Onion and garlic for 1-2 minutes.  Add chick peas and broccoli.
  2. In your blender add the water, vegetable broth powder, cashews, brown mustard and curry powder
  3. Blend until smooth.
  4. Pour over chick peas and broccoli.  Warm through.
  5. Serve over cooked rice.
